Nourish and Cheesy Mac & Cheese

Ingredients:

  • 12 oz whole wheat elbow pasta

  • 1 Tbsp butter

  • 1 Tbsp flour

  • 2 cups low-fat milk

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella

  • ½ cup plain Greek yogurt

  • 1 cup steamed cauliflower (blended smooth)

  • ½ tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

Optional:

  • ¼ cup breadcrumbs

  • 1 Tbsp parmesan

  • 1 tsp smoked paprika or chipotle powder

    Method:

  • Step One: Cook pasta to al dente

  • Step Two: Steam cauliflower and blend until smooth

  • Step Three: Melt butter; whisk in flour. Add milk and whisk until thick

  • Step Four: Add cheese; stir until melted

  • Step Five: Fold yogurt into cauliflower; add to cheese. Combine with pasta

  • Step Six (optional): Cover with breadcrumbs; bake at 375 for 10 minutes
