Nourish and Cheesy Mac & Cheese
Ingredients:
12 oz whole wheat elbow pasta
1 Tbsp butter
1 Tbsp flour
2 cups low-fat milk
1 cup shredded cheddar cheese
½ cup shredded mozzarella
½ cup plain Greek yogurt
1 cup steamed cauliflower (blended smooth)
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
Optional:
¼ cup breadcrumbs
1 Tbsp parmesan
1 tsp smoked paprika or chipotle powder
Method:
Step One: Cook pasta to al dente
Step Two: Steam cauliflower and blend until smooth
Step Three: Melt butter; whisk in flour. Add milk and whisk until thick
Step Four: Add cheese; stir until melted
Step Five: Fold yogurt into cauliflower; add to cheese. Combine with pasta
Step Six (optional): Cover with breadcrumbs; bake at 375 for 10 minutes
