Maple Glazed Baked Salmon

Ingredients
4 salmon fillets (about 6 ounces each)
1/4 cup maple syrup
2 tablespoons coconut aminos
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Toppings/ Sides
Fresh parsley, chopped (for garnish)
4 oz of baby carrots
Notes
Sandwich will last in the refrigerator for 3-4 days.
Directions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with avocado oil. 
- In a small bowl, whisk together the maple syrup, coconut aminos, minced garlic, salt, and black pepper until well combined. 
- Place all baby carrots on the prepared baking sheet and lightly brush the maple glaze over the carrots, leave plenty of the glaze for the salmon. 
- Place the salmon fillets on the prepared baking sheet, skin-side down, and brush the maple glaze generously over the top of each fillet, coating them completely. 
- Let the salmon and carrots marinate in the glaze for about 10-15 minutes to allow the flavors to meld. 
- Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. 
- Cooking time may vary depending on the thickness of the fillets, so adjust accordingly. 
- Once cooked, remove the salmon from the oven and allow it to rest for a couple of minutes. 
- Place one fillet of salmon and roughly 1 oz of baby carrots on each plate. 
- Garnish with freshly chopped parsley for added freshness and serve hot.
