Avocado and Grilled Chicken Salad
Servings: 1 Time: 20 minutes
Ingredients
1 boneless, skinless chicken breasts
1 avocado, ripe but firm
2 cups mixed salad greens
1/2 cup dice cucumber
1/2 tbsp chives
1/4 cup fresh cilantro leaves
1/2 tsp salt
1/2 tsp pepper
Dressing
2 tablespoons olive oil
1/2 tsp garlic powder
1 1/2 tbsp mustard seeds
Salt and pepper, to taste
Directions
- Preheat your grill or grill pan to medium-high heat. 
- Season the chicken breasts with salt and pepper. 
- Grill them for about 6-8 minutes per side or until cooked through. 
- Once done, remove from the grill and let them rest for a few minutes. 
- Then slice the chicken into strips. 
- Cut the avocados in half, remove the pit, and slice them lengthwise. 
- Carefully scoop out the flesh with a spoon and set aside. 
- In a large salad bowl, combine the mixed salad greens, cherry tomatoes, sliced red onion, and fresh cilantro leaves. 
- In a small bowl, whisk together the olive oil, garlic powder, mustard seeds, salt, and pepper to make the dressing. 
- Drizzle the dressing over the salad ingredients and toss gently to coat. 
- Add the grilled chicken slices and avocado slices to the salad bowl. 
- Gently toss again to combine all the ingredients. 
- Taste and adjust the seasoning if needed. 
- Enjoy! 
Notes
- Salad will last in the refrigerator for 3-4 days.
