Sheet Pan Chicken

Ingredients:

  • 1.5 lb boneless skinless chicken breast

  • 3 medium potatoes, diced

  • 2 cups broccoli florets

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 2 Tbsp olive oil

Seasoning:

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ½ tsp black pepper

Method:

  • Step One: Preheat oven to 400 degrees F

  • Step Two: Cut potatoes, toss with 1 Tbsp oil and half the seasoning

  • Step Three: Line sheet pan with parchment paper; add potatoes; roast for 15m

  • Step Four: Turn potatoes; add chicken and vegetables; coat with oil and seasoning; bake for 20-25 minutes

  • Step Five: Let rest for 5-10 minutes (should be fully cooked)
