Butternut Squash Soup (Blender-Friendly)
Total Time: 30 mins Servings: 2-3 bowls
Ingredients:
1 lb butternut squash, peeled & cubed
1 small onion, chopped
2 cups vegetable broth
1/2 tsp cinnamon
Salt, pepper, olive oil
Instructions:
Sauté the onion until soft.
Add squash, broth & cinnamon.
Simmer 15–20 mins.
Blend until smooth (in blender or immersion blender)
