Butternut Squash Soup (Blender-Friendly)

Total Time: 30 mins Servings: 2-3 bowls

Ingredients:

  • 1 lb butternut squash, peeled & cubed

  • 1 small onion, chopped

  • 2 cups vegetable broth

  • 1/2 tsp cinnamon

  • Salt, pepper, olive oil

Instructions:

  • Sauté the onion until soft.

  • Add squash, broth & cinnamon.

  • Simmer 15–20 mins.

  • Blend until smooth (in blender or immersion blender)
