Caramelized Onion, Spinach, & Swiss Egg Muffins

Ingredients
10 large eggs
2 c spinach chopped
1 large onion, diced (any color onion)
1 tbsp butter
1 tbsp olive oil
1 c shredded Swiss cheese (around 115 g)
1/4 c milk/unsweetened nut milk
salt + black pepper to taste
Instructions:
Preheat oven to 350°F, 175 °C
Caramelize onions: Heat butter and a splash of olive oil in a pan over medium-low heat and cook slowly, stirring often, 20-25 minutes until soft & golden.
Sauté spinach in a pan with onions until wilted.
Whisk eggs in a mixing bowl with milk, salt, and pepper.
Grease a muffin tin and divide the onion/spinach mix evenly. Sprinkle the Swiss cheese into every cup. Pour egg mixture until just full.
Bake: 18-22 minutes, until centers are set
