Caramelized Onion, Spinach, & Swiss Egg Muffins

Prep Time: 10 mins Cook Time: 18-22 mins Servings: 12 muffins

Ingredients

  • 10 large eggs

  • 2 c spinach chopped

  • 1 large onion, diced (any color onion)

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 c shredded Swiss cheese (around 115 g)

  • 1/4 c milk/unsweetened nut milk

  • salt + black pepper to taste

Instructions:

  • Preheat oven to 350°F, 175 °C

  • Caramelize onions: Heat butter and a splash of olive oil in a pan over medium-low heat and cook slowly, stirring often, 20-25 minutes until soft & golden.

  • Sauté spinach in a pan with onions until wilted.

  • Whisk eggs in a mixing bowl with milk, salt, and pepper.

  • Grease a muffin tin and divide the onion/spinach mix evenly. Sprinkle the Swiss cheese into every cup. Pour egg mixture until just full.

  • Bake: 18-22 minutes, until centers are set
