Autumn Harvest Bowl

Ingredients:
2 cups arugula
½ cup cooked quinoa
1 small roasted sweet potato
½ apple, sliced
¼ cup rinsed chickpeas
2 tablespoons dried cranberries
2 tablespoons goat cheese
2 tablespoons tahini
1 tablespoon maple syrup
Instructions:
Start with the arugula base on the bottom of the bowl
Pile on the cooked quinoa, sweet potato cubes, apple slices, chickpeas, dried cranberries, and the goat cheese
Make the dressing: in a small separate bowl, whisk up the tahini and maple syrup (if it is too thick, you can whisk in a tiny splash of warm water)
Pour dressing over the bowl
Gently toss everything together and enjoy!
