Autumn Harvest Bowl

Prep Time: 30 mins Serves: 1

Ingredients:

  • 2 cups arugula

  • ½ cup cooked quinoa

  • 1 small roasted sweet potato

  • ½ apple, sliced

  • ¼ cup rinsed chickpeas

  • 2 tablespoons dried cranberries

  • 2 tablespoons goat cheese

  • 2 tablespoons tahini

  • 1 tablespoon maple syrup

Instructions:

  • Start with the arugula base on the bottom of the bowl

  • Pile on the cooked quinoa, sweet potato cubes, apple slices, chickpeas, dried cranberries, and the goat cheese

  • Make the dressing: in a small separate bowl, whisk up the tahini and maple syrup (if it is too thick, you can whisk in a tiny splash of warm water)

  • Pour dressing over the bowl

  • Gently toss everything together and enjoy!
