Coach Tom’s Slow Cooker Turkey Chili

Ingredients

  • 2 lb lean ground turkey

  • 1 can chickpeas, drained

  • ½ can light kidney beans, drained

  • ½ can dark kidney beans, drained

  • 1 large onion, diced

  • 1 can crushed tomatoes (28 oz)

  • 1 can diced tomatoes (14–15 oz)

  • 1 small can tomato paste (6 oz)

  • 2 large carrots, chopped

  • 2 celery stalks, chopped

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 orange bell pepper, chopped

  • 2 cups chicken stock (low sodium)

  • 1 Tbsp minced garlic

Seasonings

  • 2 Tbsp chili powder

  • 1 tsp chipotle powder

  • 1 tsp cumin

  • ½ tsp black pepper

  • ½ tsp white pepper

  • 1 tsp salt

Optional:

  • 1 tsp smoked paprika

  • ¼ tsp cayenne pepper

Instructions

1. Add all ingredients to the slow cooker (no browning required).

2. Stir to combine.

3. Cook on low for ~8 hours.

4. Stir before serving.
