Banana Oat Pancakes

Ingredients:
- 1 banana 
- 1 egg 
- 1/2 cup of oats (steel cut or rolled) 
- 1 tsp baking powder 
- 1/4 tsp cinnamon 
- 1/4 tsp vanilla 
- 1/4 cup of milk 
- 1/2 tbsp butter 
Toppings:
- butter (as much as you like) 
- maple syrup (as much as you like) 
- 3 strawberries 
- 1/4 cup frozen blueberries 
Instructions:
- Place all ingredients in a blender and blend until smooth. 
- Heat 1/2 tbsp of butter in a pan on medium heat. 
- To know if the pan is ready, place hand hovering about 6 inches above pan and see if it is hot. If it is, than the pan is ready. 
- Using a 1/4 cup dry measuring cup (or by eye) pour 1/4 cup of pancake mix into the pan. 
- Cook each side of the pancake for 3 minutes than flip (you can also judge based on color, when the pancake is to a light brown color you can flip). 
- Place 3 pancakes on a plate. Place a pat of butter on each pancake along with your sliced strawberries and your frozen blueberries. 
- Drizzle desired amount of maple syrup on top. 
- Enjoy! 
Notes:
- Pancakes will last in the refrigerator for 1 week and the freezer for 3 months
